The Fields of the Inca are not a myth: they are terraces, farms, and ceremonies that shaped one of the continent's most creative agricultures. MOYAS was born from the conviction that this heritage lives today in Peru's markets, cooks, and guests.
We chose a terrace in the heart of Lima for this tribute. From here you see the Government Palace, the Rímac river, and — if you look well — the centuries. To cook here is to cook with the city watching.
We work with Peruvian growers: warm coastal valleys, highland altitudes, jungle wetlands. We respect traditional technique and meet it with contemporary tools. The result is Peru, placed on a plate.
